- Brush corn cobs with oil and cook on a preheated hot char-grill or barbecue for about 10 minutes or until lightly charred and soft.
- Cut corn from cobs and place in a bowl.
- Brush red pepper and chillies with oil and cook on preheated hot char-grill with garlic for 3 - 5 minutes or until skins are lightly charred.
- Chop red pepper and chillies and squeeze garlic from skins. Add red pepper, chillies, garlic, coriander and oregano to sweet corn and toss to combine.

- 3 mild fresh green chillies, halved and seeded
- 1 red pepper, quartered
- 2 teaspoons chopped fresh oregano
- 3 cobs sweet corn
