- Place tomatoes, chillies, onion and garlic in a hot dry frying pan and roast until skins are blistered and charred and flesh of vegetables are soft.
- Place the chopped garlic, tomatoes, chillies and onion in a bowl.
- Add oregano, cumin and black pepper, toss to combine and thin with water, if needed.

- 3 jalapeno or hot green chillies , roughly chopped
- 2 cloves garlic, peeled and roughly chopped
- ¼ teaspoon dried oregano
- ¼ teaspoon ground cumin
- 1 small white onion, peeled and roughly chopped
- Freshly ground black pepper and Salt, to taste
