Preparation Method :
- Dressing: Mix the spring onions with the chillies, olive oil, vinegar and lime juice in a bowl and whisk to combine.
- Mix all the ingredients in a large mixing bowl, toss to combine. Transfer the mixture to a baking dish and bake for about 20 - 30 minutes or until the vegetables turns soft.
- Place vegetables on a serving platter, scatter with feta cheese and drizzle with dressing.

- 300 grams yellow or green patty pan squash
- 100 grams carrots, peeled and halved
- 1 kg butternut pumpkin, peeled and chopped
- 2 teaspoons finely grated lime rind
- 1 tablespoon Cooking oil
- Freshly ground black pepper and salt, to taste

- 75 ml Cooking oil
- 50 ml apple cider vinegar
- 2 tablespoons lime juice
- 12 spring onions, sliced
- 3 mild fresh green chillies, sliced
