- Dressing: Place coriander, lime juice, oil and black pepper to taste in a bowl and whisk to combine.
- Place chickpeas and black and pinto beans in a bowl and toss to combine.
- Boil, steam or microwave green beans until just tender, drain and refresh under cold running water.
- Add cooked fresh beans, tomatoes, chillies and onion to bowl and toss to combine.
- Drizzle dressing over salad and allow to stand for about 20 - 30 minutes before serving.

- 50 grams tomatoes, diced
- 3 mild fresh red chillies, cut into strips
- ½ onion, very thinly sliced
- Cooked or canned chickpeas, black beans and pinto beans each 150 grams

- 2 tablespoons Cooking oil
- 50 ml lime juice
- Freshly ground black pepper and Salt, to taste
