TWO CLASSIC SALSAS

Preparation Time :
30 minutes

Preparation Method :

  • To make the jalapeno salsa, place the onion in a non-metallic bowl with the garlic, chilies, lemon juice and cumin. Season to taste with salt and stir together. Cover and chill until required.
  • To make a chunky-textured salsa cruda, stir all the ingredients together in a non-metallic bowl, adding salt to taste. Cover and chill until required.
  • To make a smoother-textured salsa, process the ingredients in a food processor or blender. Cover and chill until required.

INGREDIENTS

  • 6-8 ripe tomatoes, finely chopped 
  • 100 ml tomato juice
  • 4 garlic cloves, finely chopped 
  • 1 bunch fresh coriander leaves, coarsely chopped 
  • Pinch of sugar
  • 4 fresh green chilies, such as jalapeno or Serrano, deseeded and finely chopped 
  • 1 teaspoon ground cumin
  • 3-4 spring onions, finely chopped 
  • Salt
