Preparation Method :
- Heat oil in a saucepan over a medium heat, add onions and cook, stirring, for 3 minutes or until soft.
- Add chillies, oregano, cumin, peppercorns, bay leaves and cinnamon and cook, stirring, for 1 - 2 minutes.
- Stir vinegar and stock into pan and bring to the boil. Add mussels, simmer, cover for about 5 minutes or until mussels open.
- Discard any mussels that do not open after cooking. Serve mussels with pan juices.

- 1 kg mussels in shells, scrubbed and beards removed
- 2 teaspoons Cooking oil
- 50 grams onions, chopped
- 3 medium fresh green chillies, chopped
- 1 teaspoon ground cumin
- ½ teaspoon crushed black peppercorns
- 3 bay leaves
- 1 cinnamon stick
- 50 ml apple cider vinegar
- 350 ml fish stock
- 2 teaspoon chopped fresh oregano
