ROASTED PEPPERS WITH HERBS

Preparation Method :
- Place red and green peppers and chillies in a hot frying pan and cook until skins are blistered and charred.
- Allow to stand for about 10 - 12 minutes or until cool enough to handle.
- Remove the peppers and chillies skin, then cut off tops and discard the seeds and membranes. Cut into thick slices.
- Place onions in frying pan and cook for about 3 - 5 minutes or until soft and charred.
- Place the peppers, chillies, onions, marjoram, thyme, lime juice, oil, black pepper and salt in a bowl and toss to combine. Allow to stand for about 20 - 30 minutes before serving.

- 50 ml lime juice
- 50 ml Cooking oil
- 150 grams red peppers
- 100 grams green peppers
- 4 medium fresh green chillies
- 2 onions, quartered
- 2 tablespoons fresh marjoram leaves
- 2 tablespoons fresh thyme leaves
- Freshly ground black pepper and Salt, to taste
