ROASTED PEPPERS WITH HERBS

Serves :

Preparation Time :
45 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Place red and green peppers and chillies in a hot frying pan and cook until skins are blistered and charred.
  • Allow to stand for about 10 - 12 minutes or until cool enough to handle.
  • Remove the peppers and chillies skin, then cut off tops and discard the seeds and membranes. Cut into thick slices.
  • Place onions in frying pan and cook for about 3 - 5 minutes or until soft and charred.
  • Place the peppers, chillies, onions, marjoram, thyme, lime juice, oil, black pepper and salt in a bowl and toss to combine. Allow to stand for about 20 - 30 minutes before serving.

INGREDIENTS

  • 50 ml lime juice
  • 50 ml Cooking oil
  • 150 grams red peppers
  • 100 grams green peppers
  • 4 medium fresh green chillies
  • 2 onions, quartered
  • 2 tablespoons fresh marjoram leaves
  • 2 tablespoons fresh thyme leaves
  • Freshly ground black pepper and Salt, to taste
