ROASTED GARLIC FISH

Cooking Time :
50 minutes

Preparation Method :

  • Pre heat oven temperature 180°C / 350°F
  • Pat dry fish with kitchen paper. Place fish in a baking dish and fill cavity with lemon slices, chillies and marjoram sprigs.
  • Place garlic in a hot frying pan and cook until skins are charred and garlic is soft.
  • Squeeze garlic from skins into a bowl, add butter and mix to combine.
  • Spread garlic butter over both sides of fish, cover with foil and bake for about 30 - 40 minutes or until flesh flakes.
  • Remove foil, place under a hot grill and cook for 5 minutes each side or until skin is crisp. Drizzle with coconut milk.

INGREDIENTS

  • 100 ml coconut milk
  • 1.5 kg whole fish snapper, sea perch, cod or haddock, etc. cleaned
  • 1 lemon, sliced
  • 2 fresh red chillies, halved
  • 7 cloves garlic, unpeeled
  • 2 tablespoon butter
  • 3 sprigs fresh marjoram
