- Pre heat the oven to 180°C / 350°F
- Combine chilli powder, paprika, crushed garlic and tequila in a small mixing bowl.
- Score the flesh in a crisscross pattern, then spread the glaze liberally over the top and place on a rack in a baking dish.
- Place orange and garlic cloves around the duck and bake for about 25 - 30 minutes. Drain juices from pan.
- Bake for about 30 - 40 minutes or until the meat is tender. Just before serving, scatter with mint.

- 1 orange, halved
- 1 head garlic, cloves separated
- 3 cloves garlic, crushed
- 2 tablespoons tequila
