Preparation Method :
- Dressing: Mix all the ingredients in a large mixing bowl, toss to combine.
- Place potatoes in a saucepan of boiling water and cook until tender. Drain and place in a serving bowl.
- Pour dressing over warm potatoes, toss to combine and allow to stand at room temperature for an hour or two before serving.
INGREDIENTS
- 1½ kgs baby new potatoes, halved
Chilli Vinegar Dressing
- 2 red onions, sliced
- 3 jalapeno chillies, chopped
- 250 ml apple cider vinegar
- 3 fresh red chillies, seeded and chopped
- 2 cloves garlic, crushed
- 2 tablespoons sugar
- 2 teaspoons fresh oregano leaves
- 4 fresh or dried bay leaves
- 100 ml water
- 2 tablespoons capers, drained
- 2 tablespoons fresh thyme leaves
