Preparation Method :
- Heat oil in a deep frying pan over a medium heat, add onion and garlic and cook, stirring, at least for 5 minutes or until golden and soft.
- Add the soaked rice and cook, stirring, for about a minute.
- Stir in the chillies, oregano, stock, tomato puree and bring to the boil. Adjust seasoning with pepper and salt.
- Reduce heat, cover and simmer for about 20 - 22 minutes or until rice is tender.
- Serve rice with grilled meats or chicken, tortillas and salsas.

- 400 grams long grain white rice, soaked and drained
- 2 tablespoons Cooking oil
- 4 fresh green chillies
- 1 tablespoon chopped fresh oregano
- 1 litre chicken stock
- 1 onion, chopped
- 2 cloves garlic, crushed
- Freshly ground black pepper and salt, to taste
