GREENS WITH GARLIC DRESSING

Preparation Method :
- Dressing: Drop the garlic in a frying pan over a high heat and cook until skins are charred. Cool slightly and remove skins.
- Boil, steam spinach, beans and zucchini (courgettes), separately, until they just change colour. Drain and place on a serving platter.
- Place the garlic, oil, vinegar and black pepper to taste in a food processor and process until smooth. Stir in parsley and spoon over warm greens.

- 500 grams English spinach, shredded
- 175 grams green beans
- 250 grams zucchini (courgettes), sliced
Roasted Garlic Dressing
- 6 cloves garlic, unpeeled
- 100 ml Cooking oil
- 3 tablespoons balsamic or red wine vinegar
- Freshly ground black pepper and Salt, to taste
- 2 tablespoons chopped fresh flat leaf parsley
