GREENS WITH GARLIC DRESSING

Preparation Method :

  • Dressing: Drop the garlic in a frying pan over a high heat and cook until skins are charred. Cool slightly and remove skins.
  • Boil, steam spinach, beans and zucchini (courgettes), separately, until they just change colour. Drain and place on a serving platter.
  • Place the garlic, oil, vinegar and black pepper to taste in a food processor and process until smooth. Stir in parsley and spoon over warm greens.

INGREDIENTS

  • 500 grams English spinach, shredded
  • 175 grams green beans
  • 250 grams zucchini (courgettes), sliced

Roasted Garlic Dressing

  • 6 cloves garlic, unpeeled
  • 100 ml Cooking oil
  • 3 tablespoons balsamic or red wine vinegar
  • Freshly ground black pepper and Salt, to taste
  • 2 tablespoons chopped fresh flat leaf parsley
