GREEN RICE

Preparation Method :

  • Heat an unoiled heavy-based frying pan and cook the onion, garlic, chili and pepper, if using, until lightly charred on all sides, including the cut sides of the onions. Cover and cool.
  • When cool enough to handle, remove the skin and seeds from the chili and pepper, if using. Chop the flesh.
  • Remove the skins from the cooled onion and garlic and finely chop.
  • Place the vegetables in a food processor or blender with the chopped coriander leaves and stock, then process to a smooth thin puree.
  • Heat the oil in a heavy-based saucepan. Add the rice and cook until it is glistening and lightly browned in places, stirring to prevent it burning. Add the vegetable puree, cover and cook over medium-low heat for 10-15 minutes, or until the rice is just tender.
  • Fluff up the rice with a fork, then cover and let-stand for 5 minutes. Adjust the seasoning, garnish with a coriander sprig and serve.

  • 2 onions, unpeeled and halved
  • 6-8 large garlic cloves, unpeeled 
  • 1 large mild fresh chili or
  • 1 green pepper and
  • 1 small fresh green chili 
  • 1 bunch fresh coriander leaves, chopped 
  • 250 ml chicken or vegetable stock 
  • 6 tablespoon Cooking oil
  • 175 grams long-grain rice
  • Salt and pepper
  • Fresh coriander sprig, to garnish
