Preparation Method :
- Sift the flour, salt and baking powder into a large bowl. Add the shortening and rub it in with your fingertips until the mixture resembles fine breadcrumbs. Add enough water to form soft dough.
- Turn out the dough onto a lightly floured work surface and knead until smooth. Divide the dough into 12 pieces and shape each into a ball. Cover with a clean tea towel and let rest for 15 minutes.
- Roll out 1 ball at a time, keeping the remainder of the dough covered, into an 18-cm/7-inch circle. Stack the tortillas between sheets of non¬stick baking parchment.
- Heat a griddle pan or large, heavy-based frying pan over medium-high heat. Cook 1 tortilla at a time for 1-2 minutes on each side, or until lightly browned in places and puffed up.
- Serve Warm.
