FISH WITH MARINATED ONIONS

Preparation Method :
- Marinated Onions: Place onions with coriander leaves, sugar and lime juice in a bowl, cover and marinate at least for an hour.
- Pat dry the fish fillets on absorbent kitchen paper.
- Place flour, cumin, chilli powder and ground coriander in a bowl and mix to combine.
- Add fish and toss to coat with spice mixture, then shake off excess.
- Heat oil in a frying pan over a medium heat, add fish and cook at least for 2 minutes each side or until flesh flakes. Serve with marinated onions.

- 750 grams firm white fish fillets
- 3 tablespoon flour
- 2 teaspoons ground coriander
- 2 tablespoons Cooking oil
- 1 tablespoon ground cumin
- 1 tablespoon mild chilli powder
Lime Marinated Onions
- 3 tablespoons fresh coriander leaves
- 3 white onions, thinly sliced
- 1 tablespoon sugar
- 150 ml lime juice
