FISH WITH MARINATED ONIONS

Preparation Time :
20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Marinated Onions: Place onions with coriander leaves, sugar and lime juice in a bowl, cover and marinate at least for an hour.
  • Pat dry the fish fillets on absorbent kitchen paper.
  • Place flour, cumin, chilli powder and ground coriander in a bowl and mix to combine.
  • Add fish and toss to coat with spice mixture, then shake off excess.
  • Heat oil in a frying pan over a medium heat, add fish and cook at least for 2 minutes each side or until flesh flakes. Serve with marinated onions.

INGREDIENTS

  • 750 grams  firm white fish fillets
  • 3 tablespoon flour
  • 2 teaspoons ground coriander
  • 2 tablespoons Cooking oil
  • 1 tablespoon ground cumin
  • 1 tablespoon mild chilli powder

Lime Marinated Onions

  • 3 tablespoons fresh coriander leaves
  • 3 white onions, thinly sliced
  • 1 tablespoon sugar
  • 150 ml lime juice
