FISH BAKED WITH LIME

Preparation Method :

  • Place the fish fillets in a non-metallic bowl and sprinkle with salt and pepper to taste. Squeeze the juice from the lime over the fish.
  • Heat the oil in a frying pan. Add the onion and garlic and cook for 2 minutes, or until softened, stirring frequently. Remove from the heat.
  • Place a third of the onion mixture and a little of the chilies and coriander in the bottom of a shallow baking dish or roasting pan. Arrange the fish on top. Top with the remaining onion mixture, chilies and coriander.
  • Bake in a preheated oven, 180°C/350°F/ Gas Mark 4, for 15-20 minutes, or until the fish has become slightly opaque and firm to the touch. Serve at once, with lemon and lime wedges for squeezing over the fish and whole pickled chilies, if wished.

INGREDIENTS

  • 1 kg white fish fillets, such as bass, flounder or cod
  • 1 lime, halved
  • 3 tablespoon Cooking oil
  • 1 large onion, finely chopped 
  • 3 garlic cloves, finely chopped
  • 2-3 pickled jalapeño chilies, chopped, plus extra whole chilies to serve(optional) 
  • 6-8 tablespoon chopped fresh coriander
  • Salt and pepper
  • Lemon and lime wedges, to serve
