FISH BAKED IN CORN HUSKS

Preparation Time :
20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Oven temperature 180°C/ 350°F
  • Place corn husks in a bowl, pour over warm water to cover and soak for 30 minutes.
  • Chilli Paste: Place garlic, chillies, oregano, chilli powder, lime rind, cumin and lime juice in a food processor and process until smooth.
  • Cut each fish fillet in half, then spread both sides with chilli paste.
  • Overlap 2 corn husks, place a piece of fish on top, then cover with more husks, fold to enclose fish and tie to secure.
  • Place the parcels on a baking tray and bake for 10 minutes or until flesh flakes.
  • Open the fish parcels, scatter with coriander and accompany with avocado and tortillas.

INGREDIENTS

  • 16-24 dried corn husks
  • 4 firm white fish fillets
  • 3 tablespoons fresh coriander leaves
  • 1 avocado
  • Corn or flour tortillas, warmed

Chilli Lime Paste

  • 1 tablespoons fresh oregano leaves
  • 2 tablespoons mild chilli powder
  • 2 teaspoons grated lime rind
  • 3 cloves garlic, chopped
  • 2 mild fresh green chillies, chopped  
  • 1 teaspoon ground cumin
  • 50 ml lime juice
