DRUNKEN BEANS

Preparation Time :

Cooking Time :
1 hour

Preparation Method :

  • Place beans in a saucepan and pour over fresh cold water to cover. Bring to the boil for about 10 - 12 minutes.
  • Simmer to low flame, add halved onion and garlic, cover and simmer for 1 - 1½ hours or until beans are tender. Drain and set aside.
  • Heat butter and oil in a frying pan over a medium heat, add chopped onion and cook for 3 - 5minutes or until soft.
  • Add tomatoes, chillies, coriander, beer and beans, simmer for about 30 - 35 minutes or until mixture thickens.

INGREDIENTS

  • 350 grams dried pinto beans, soaked overnight and drained
  • 2 tomatoes, chopped  
  • 1 onion, halved
  • 3 cloves garlic
  • 1 tablespoon butter
  • 1 tablespoon Cooking oil
  • 1 onion, chopped
  • 2 serrano chillies, chopped
  • 1 bunch fresh coriander, leaves chopped
  • 225 ml beer
