CRISPY FISH TACOS

Serves :

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • To make the batter, put the egg yolk in a bowl. Add the oil and mix, then add the chilled soda. Add the tempura flour.
  • Grill the pineapple until charred. Cut into small pieces, mix with the remaining ingredients and keep aside.
  • Coat the fish in the flour, then dip in the tempura batter and deep-fry in hot oil until light golden in colour.
  • To serve, place all the condiments and the salsa separately in bowls and let your guests make their own tacos.

 

INGREDIENTS

  • 500 grams fish, diced
  • 3 tablespoon Tempura flour
  • Peanut Oil to deep-fry
  • 10 Mini tortilla shells
  • 4 tablespoon Guacamole
  • 4 tablespoon Sour cream
  • 8 Pickled onions and jalapehos each, sliced

The Tempura Batter

  • 1 Egg yolk, chilled
  • 50 ml oil, chilled
  • 100 grams Soda, chilled
  • 200 grams Tempura flour, chilled

The Pineapple Salsa

  • 8 slices of Pineapple
  • 4 teaspoon Pickled jalapenos, chopped
  • 2 Lemons, juiced
  • 50 grams Coriander, finely chopped
  • 2 tablespoon Sesame oil
  • 1 Red chilli, chopped
  • A pinch of Salt and pepper
