CHILI-MARINATED PRAWNS WITH AVOCADO SAUCE

Preparation Method :

  • Preheat the barbecue. Combine the prawns with the cumin, chili powder, paprika, orange juice and rind, oil and half the coriander. Season to taste with salt and pepper.
  • Thread the prawns onto metal skewers, or bamboo skewers that have been soaked in cold water for 30 minutes.
  • Cut the avocados in half around the stone. Twist apart, and then remove the stone with a knife. Carefully peel off the skin, and then dice the flesh. Immediately combine the avocados with the remaining coriander, onion, chili and lime juice in a non-metallic bowl. Season to taste with salt and pepper and set aside.
  • Place the prawns over the hot coals of the grill and cook for only a few minutes on each side, or until bright pink and opaque.
  • Serve the prawns garnished with chopped coriander and accompanied by the avocado sauce.

INGREDIENTS

  • 650 grams large raw prawns, shelled, deveined and tails left intact
  • ½ teaspoon ground cumin
  • ½ teaspoon mild chili powder 
  • ½ teaspoon paprika 
  • 2 tablespoon orange juice grated rind of 1 orange 
  • 2 tablespoon Cooking oil
  • 2 tablespoon chopped fresh coriander, plus extra to garnish
  • 2 ripe avocados
  • ½ onion, finely chopped 
  • ¼ fresh green or red chilli,deseeded and chopped
  • Juice of ½ lime
  • Salt and pepper
