CHICKEN IN BANANA LEAVES

Preparation Method :

  • Pre heat the oven temperature to 180°C / 350°F
  • Spice Mixture: Drop the chillies in a hot frying pan and cook until skins are blistered and charred.
  • Transfer the chillies to a bowl, pour water and soak for at least 20 - 30 minutes. Drain the chillies.
  • Place the soaked chillies, green chillies, garlic, paprika, oregano, cumin, orange rind and lemon juice in a food processor and process to a smooth paste.
  • Cut chicken breasts in half and spread with spice mixture.
  • Warm banana leaves by holding over a gas flame in the mircowave until pliable.
  • Place a piece of chicken on each banana leaf, top with any remaining spice mixture and scatter over spring onions and coriander.
  • Fold banana leaves around chicken to enclose and tie to secure.
  • Place parcels in a glass dish and marinate in the refrigerator for about 2 - 3 hours or overnight.
  • Transfer chicken parcels to a baking dish and bake for about 30 minutes or until chicken is tender.

INGREDIENTS

  • 500 grams whole chicken breasts on the bone, skin removed
  • 3 tablespoons fresh coriander leaves
  • 4 large banana leaves
  • 4 spring onions, chopped

Spice Mixture

  • 2 hot fresh green chillies, chopped
  • 3 cloves garlic, chopped
  • 3 New Mexico chillies
  • 2 teaspoons ground cumin
  • 2 teaspoons finely grated orange rind
  • 2 tablespoons lemon juice
  • 2 tablespoons sweet paprika
  • 250 ml water
  • 1 tablespoon fresh oregano leaves
