- Pre heat the oven temperature to 180°C / 350°F.
- Place half of the sweet corn kernels and butter in a food processor and process until smooth.
- Transfer the sweet corn mixture to a bowl, stir in the baking powder and remaining sweet corn kernels.
- Place zucchini (courgettes) between sheets of absorbent kitchen paper and squeeze to remove extra liquid.
- Stir zucchini (courgettes) and chillies into corn mixture, then pour into a 9 inch greased ovenproof dish.
- Scatter with onion and cheese and bake for about 20 - 30 minutes or until pudding is firm.
