CARAMELISED MILK

Preparation Method :

  • Place sugar and egg yolks in a bowl and beat until thick and creamy. Blend cornflour with ½ cup of the milk.
  • Beat the almond meal, remaining milk, cornflour mixture, vanilla essence and cinnamon into egg mixture.
  • Pour the mixture into a saucepan and cook over a low heat, stirring constantly, until mixture boils and thickens.
  • Pour the mixture into a heatproof serving dish, cover the surface with a piece of greased baking paper and chill until set.
  • Topping: Remove paper from top of pudding, then sprinkle with sugar and dot with butter.
  • Heat a large metal spoon over a high heat for about 10 - 12 minutes or until very hot. Run spoon over topping until sugar caramelises.

INGREDIENTS

  • 1 litre milk
  • 250 grams sugar
  • 9 eggs yolks
  • 4 tablespoons cornflour
  • 3 tablespoons almond meal
  • 2 teaspoons vanilla essence
  • Pinch ground cinnamon

Sugar Topping

  • 2 tablespoon butter
  • 100 grams sugar
