YUBA ROLLS

Preparation Method :

  • Wrap dried yuba in a wet cloth and leave it undisturbed for about 30 minutes until it is soft.
  • Combine the yam, mushroom, and carrot in a bowl.
  • Season with salt, pepper, and cornstarch and mix it well.
  • Make a paste by dissolving all purpose flour with water.
  • Spread out the yuba slices and place 1 or 2 teaspoon of the above prepared mixture on the yuba slices.
  • Fold the yuba over to make rectangular envelopes and seal the edges using the flour-and-water mixture.
  • Heat the oil in a skillet and place the yuba envelopes in the oil with help of slotted spoon. Fry yuba envelops until it turns golden brown.
  • Remove it from the oil and place it on the absorbent paper to absorb the excess oil.
  • Cut the yuba envelopes in half and garnished with salt.
  • Serve it immediately.  

INGREDIENTS

  • 4 slices dried yuba/rice-paper wrappers
  • 30 grams nagaimo yam (peeled and finely diced) 
  • 4 fresh shiitake or button mushroom caps (finely diced) 
  • 15 grams carrot (peeled and finely chopped) 
  • 1 tablespoon cornstarch 
  • 1 tablespoons all-purpose flour 
  • 1 tablespoon water 
  • 1 teaspoon salt for garnishing
  • Cooking oil for deep-frying 
  • Salt to taste
  • White pepper to taste
