GRILLED EGGPLANT WITH MISO SAUCE

Preparation Time :
20 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Slice the eggplant into two portions and using a knife, slash across the length of the eggplant without detaching.
  • Boil the eggplant for approximately 10 minutes, remove and immerse in cold water and immediately take out.
  • Set pan over high heat and add enough oil to submerge the eggplant.
  • Once the oil becomes hot, reduce heat to medium and fry the eggplant until the outer skin is crisp. Remove and allow excess oil to drip off.
  • Set grilling pan over medium heat and grill the fried eggplant until the outer skin is lightly seared and crisp. Remove and place onto a plate. Set aside.
  • Dissolve sweet miso paste with dried bonito fish stock, sake, mirin, and honey. Stir the contents onto a pan.
  • Simmer over medium heat until boiled and apparently thickened. Pour the mixture into a cup and set aside.
  • Arrange eggplant onto a plate and pour over with miso sauce.
  • Garnish with shredded green onions and sprinkle ground sesame.

INGREDIENTS

  • 2 medium-sized eggplant
  • 6 tablespoon sweet miso paste
  • 2 tablespoon sake
  • 1 tablespoon mirin
  • 4 tablespoon dried bonito fish stock
  • 4 tablespoon hone
  • Coarsely ground white sesame and shredded Japanese green onions (for sprinkling)
  • Sesame oil for frying
