MOCHI SOUP

40 minutes

Preparation Method :

  • Slice chicken or pork into bite-sized pieces.
  • Boil the spinach and add a pinch of salt. Boil until the vegetable is fully cooked then remove and place immerse in cold water.
  • Squeeze out the excess water from the spinach and cut into ½ inch piece.
  • Similarly cut up the Chinese celery into ½ inch piece. Slice the naruko (fish roll) into pieces.
  • Boil the dried bonito fish stocks and add hondashi, soybean sauce, sake, and ground slat then stir to mix.
  • Add chicken or pork followed by carrots and naruko and simmer until the meat content is fully cooked then add Chinese celery and remove from heat.
  • Roast the mocha over a grill or in a roasting pan without adding any oil.
  • Roast until the surface is lightly seared on both sides. Remove from grill or pan.
  • Serve hot.

INGREDIENTS

  • 150 grams chicken or pork breast meat
  • 2 stick naruko (fish roll)
  • 8 pieces mocha
  • 10 pieces flower - shaped carrot
  • 2 spinach
  • 2 stem Chinese celery
  • 500 grams dried bonito fish stocks
  • 2 tablespoon hondashi
  • 2 tablespoon soybean sauce
  • 2 tablespoon sake
