LOTUS ROOT SOUP

Preparation Method :

  • Rinse lotus roots, peel and slice then soak in water.
  • Leave in water briefly before squeezing in a small quantity of lemon juice to prevent darkening of the lotus roots.
  • Cut green onions into pieces of ¼ inch.
  • Boil dried bonito fish stock and season with hondashi, mirin, and ground salt.
  • Stir and bring to a boil again then add lotus roots and green onions.
  • Dissolve miso paste into warm water and pour mixture into pot and stir. Boil and remove from heat.
  • Dispense into serving cups and serve with cooked Japanese rice.
  • Pour over with green tea soup and serve hot.

INGREDIENTS

  • 5 small heads Chinese or Japanese lotus roots
  • 500 grams dried bonito fish stock
  • 5 tablespoon sweet miso paste
  • 2 stem Japanese green onions
  • 2 tablespoon mirin
  • 2 tablespoon hondashi
  • Ground salt
  • Cooked Japanese rice
