GREEN TEA RICE SOUP

Preparation Time :
40 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Heat pan and add butter followed by salmon meat.
  • Roast in pan until cooked then remove onto a plate and tear up into little pieces.
  • Infuse the green tea leaves in very cold water and leave for 10-15 minutes the filter out the tea leaves.
  • Boil the filtered tea and flavor with mirin, brown sugar, ground salt, and hondashi. Thoroughly blend the mixture and bring to a boil again. Remove from heat.
  • Scoop cooked rice into a cup and top with salmon.
  • Garnish with shredded green onions and sprinkle with the white sesame.
  • Pour over with green tea soup and serve hot.

INGREDIENTS

  • 300 grams cooked Japanese rice
  • 2 piece salmon meat
  • 20 grams salted butter
  • 500 ml cold water
  • 5 tablespoon green tea 
  • 2 tablespoon mirin
  • 2 tablespoon hondashi
  • 2 tablespoon brown sugar
  • Coarsely ground white sesame for sprinkling
  • Ground salt
  • 5 shiso leaves for garnishing
