JAPANESE MUSHROOM AND SOBA SALAD

The Japanese Mushroom and Soba Salad are a Japanese specialty. You can find this traditional salad in any restaurant and take away stand. Make it fresh yourself at home and you will taste the delicious flavors even more. It’s definitely a party success dish.

Preparation Time :
15 minutes

Preparation Method :

  • Start by boiling the Soba, and during that, add Oil and a pinch of Salt to prevent the noodles from sticking together.
  • Boil them for approximately 10-15 minutes. Once done, cool the noodles down, under very cold water and place them on the side.
  • Then rinse the Mushrooms very well and cut the Mushrooms into small pieces. Then soak the Mushrooms into cold water for a few seconds and immediately take them out.
  • Set these as well on the side after you dry them with a paper towel.
  • Now boil the Bell Peppers until these are fully cooked. When these are done, as well cool them down by soaking them in Cold Water and then immediately removing them. Also place on the side for the time being.
  • Take a pan, add some Olive Oil and heat up over medium heat. Add the Vinegar, the Brown Sugar, the Ground Salt and the Chili Sauce. Stir all together until the Sugar dissolves.
  • Taste to makes sure the blends are balanced, between Sour, Sweet, Salty and Mild spiciness.
  • Now add the Bell Peppers and the Japanese Mushrooms and mix all the ingredients together.
  • Now take the Soba, place it in a bowl or large platter. Take the whole mixture and pour everything over the Soba.
  • To finish up, sprinkle the White Sesames and the salad is ready!

INGREDIENTS

  • 300 grams of boiled Soba
  • 300 grams of Japanese Mushrooms
  • 200 grams of Green, Yellow and Red Bell Peppers
  • 3 Teaspoons of Chili Sauce
  • 2 Teaspoons of Coarsely Round White Sesame
  • 2 Tablespoons of Sesame oil
  • 1½ Tablespoons of Brown Sugar
  • ½ Tablespoon of Ground Salt
  • 100 ml Japanese Vinegar
