Preparation Method :
- Rinse the rice 3 times, soak in water and leave for 30-60 minutes.
- Simmer the chestnuts in boiling water for about 10-15 minutes, adding a small amount of salt while boiling.
- Pour into cold water, and peel off the shell and place in a container and set aside.
- Pour the soaked rice into a strainer and rest to allow excess water to dip off, then place the rice into an electric rice cooker, add fresh water, flavor with Japanese soybean sauce, mirin, sake.
- Using a wooden spatula, gently stir the rice to blend the mixture together and place chestnuts over the rice, close the lid, and start the cooker.
- Part through the rice with a wooden spatula and scoop into a bowl.
- Serve with grated carrots and shredded cauliflowers.

- 2 tablespoon sake
- 4 tablespoon Japanese soybean sauce
- 2 tablespoon mirin
- Ground salt
- Shredded cauliflower or grated carrots for garnishing
