ZUCCHINI FRITTERS

Preparation Method :

  • Mix the grated zucchini, garlic, Parmesan, flour, and beaten egg together in a large bowl and season with salt and pepper.
  • Heat the oil in a frying pan. Put spoonfuls of the zucchini mixture in the hot oil and fry for about 4-5 minutes on each side or until golden and crispy.
  • As the fritters are done, lift them out of the pan with a slotted spoon, pile in a warmed serving dish and keep warm.
  • Keep cooking until all the zucchini mixture is used up.
  • Serve the fritters sprinkled with salt and accompanied by lemon wedges.

INGREDIENTS

  • 1 kg zucchini, trimmed and grated
  • 2 garlic clove, crushed
  • 200 grams freshly grated Parmesan cheese
  • 200 grams all-purpose flour
  • 2 eggs, beaten
  • Cooking oil, for frying
  • Salt and pepper
  • 2 lemons cut into 4 wedges, to serve
