Preparation Method :
- Mix the grated zucchini, garlic, Parmesan, flour, and beaten egg together in a large bowl and season with salt and pepper.
- Heat the oil in a frying pan. Put spoonfuls of the zucchini mixture in the hot oil and fry for about 4-5 minutes on each side or until golden and crispy.
- As the fritters are done, lift them out of the pan with a slotted spoon, pile in a warmed serving dish and keep warm.
- Keep cooking until all the zucchini mixture is used up.
- Serve the fritters sprinkled with salt and accompanied by lemon wedges.

- 1 kg zucchini, trimmed and grated
- 2 garlic clove, crushed
- 200 grams freshly grated Parmesan cheese
- 200 grams all-purpose flour
- 2 eggs, beaten
- Cooking oil, for frying
- Salt and pepper
- 2 lemons cut into 4 wedges, to serve
