Preparation Method :
- Cut the potatoes lengthwise into quarters and make sure that they are thoroughly dry.
- Put half of the oil into a large roasting pan and place in a preheated oven, 450°C to warm through.
- Mix together the remaining oil and the rosemary, and toss the potatoes to coat them completely.
- Add the potatoes to the roasting pan in the oven. Shake carefully to make an even layer, and then place the pan at the top of the oven and roast for 20 minutes.
- Remove the pan from the oven and move the potatoes around so that they cook evenly.
- Scatter the garlic among the potatoes, return the pan to the oven and cook for 5 minutes more.
- Remove the potatoes from the oven, season with salt and pepper.
- Serve immediately.
