- Cut the melon in half and take out the seeds. Cut the flesh into 12 thin crescents and remove the rind.
- Arrange 3 melon crescents on each plate with 3 pieces of ham. Season with freshly ground black pepper.

- 1 large melon, honeydew if possible
- 12 paper-thin slices Parma ham
- Freshly ground black pepper
