- Brush the grill with oil and preheat. Cut each bell pepper in half lengthwise into 4 strips. Toast the bread slices on both sides in a toaster or under a broiler.
- When the grill is hot add the bell peppers and fennel and cook at least for 2 minutes.
- Add the onion and zucchini, cook for another 5 minutes or until all the vegetables are tender but still firm to bite. Cook the vegetables in batches and place on the grill in a single layer.
- Rub the garlic halves over the toasts, then rub them with the tomato halves. Place on warm plates.
- Pile the grilled vegetables on top of the toasts, drizzle with olive oil and season with salt and pepper. Garnish with sage leaves and serve warm.
