Preparation Method :
- Dust the zucchini slices all over with the flour.
- Heat the oil in a frying pan and fry the zucchini, in batches, for 2 minutes on each side until golden. Remove from the pan and keep warm.
- When all the zucchini are cooked, pour off the oil from the pan.
- Add the butter, chilies, garlic, lemon peel and juice, and the olives and heat until the butter is foaming.
- Pour over the zucchini, season with salt and pepper and toss.
- Serve immediately.

- 750 grams zucchini, thickly sliced
- 300 grams all-purpose flour
- Cooking oil, for frying
- 100 grams butter
- 1 teaspoon crushed dried chilies
- 4 garlic cloves, crushed
- Peel and juice of 2 lemons
- 2 tablespoon green olives, pitted and chopped
- Salt and pepper
