Preparation Method :

  • Toast the bread under a preheated boiler until golden brown.
  • Rub the garlic over one side of the bread; the bread acts as a grater and he garlic is evenly spread over the bread. Sprinkle with the parsley and salt to taste and drizzle with the oil.
  • Mix together the red peppers, olives and crumbled goat cheese and season with pepper.
  • Spread the mixture evenly over the toasted bruschetta and place under a preheated low broiler for 2 minutes to just melt the cheese.
  • Serve at once.  

INGREDIENTS

  • 15 slices of ciabatta bread
  • 4 garlic cloves, peeled
  • Small handful of Italian parsley, chopped
  • 10 tablespoons Cooking oil
  • 4 red bell peppers, cored, seeded, skinned and sliced into strips 
  • 300 grams black olives, pitted 
  • 250 grams goat cheese, crumbled
  • Salt and pepper
