Preparation Method :
- Heat the oil in a saucepan. Add the leeks and orange and red bell peppers, and stir well.
- Cover the pan and cook very gently for 10 minutes.
- Add the balsamic vinegar and cook for 10 minutes more without a lid.
- The vegetables should be brown from the vinegar and all the liquid should have evaporated.
- Season well, and then stir in the parsley just before serving.

- 4 tablespoons Cooking oil
- 4 leeks cut into ½ inch pieces
- 2 orange bell pepper, cored, seeded and cut into ½ inch chunks
- 2 red bell pepper, cored, seeded and cut into ½ inch chunks
- 5 tablespoons balsamic vinegar
- Italian parsley, chopped
- Salt and pepper
