BALSAMIC BRAISED LEEKS AND BELL PEPPERS

Preparation Time :
10 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat the oil in a saucepan. Add the leeks and orange and red bell peppers, and stir well.
  • Cover the pan and cook very gently for 10 minutes.
  • Add the balsamic vinegar and cook for 10 minutes more without a lid.
  • The vegetables should be brown from the vinegar and all the liquid should have evaporated.
  • Season well, and then stir in the parsley just before serving.

INGREDIENTS

  • 4 tablespoons Cooking oil
  • 4 leeks cut into ½ inch pieces
  • 2 orange bell pepper, cored, seeded and cut into ½ inch chunks 
  • 2 red bell pepper, cored, seeded and cut into ½ inch chunks
  • 5 tablespoons balsamic vinegar
  • Italian parsley, chopped
  • Salt and pepper
