Preparation Method :
- Heat the olive oil in a saucepan. Add the shallots, garlic, bacon, carrot, celery, and red bell pepper and cook, stirring occasionally, for 5 minutes.
- Add the beans, stock, bay leaf, oregano, and marjoram. Bring to a boil and simmer for 15 minutes. Skim off any scum that may come from the beans.
- Taste and season well. Finally, just before serving, add the chopped parsley.
- To serve, ladle into warmed bowls and drizzle each one with a little extra virgin olive oil.

- 500 grams can borlotti beans, drained and rinsed
- 2 quart chicken stock
- 2 bay leaves
- 2 teaspoon chopped oregano
- 2 teaspoon chopped marjoram
- Handful of Italian parsley, chopped
- Salt and pepper
- olive oil, to drizzle
