ARANCINI DI RISO

Preparation Method :

  • Combine rice, egg yolk, cheese and butter in a bowl and blend it well. Cover it and keep in the refrigerator for 10 -1 5 minutes.
  • To prepare the filling, melt a teaspoon of butter in a pan and cook beef and onion over medium heat until meat is cooked.
  • Add the tomato sauce, peas, salt and pepper, mix it well. Remove it from the heat and keep the filling aside.
  • Remove the rice mixture from the refrigerator and shape into small sized patties.
  • Spread a tablespoon of meat filling in the centre of each patty. Roll it into a ball.
  • Place egg whites and bread crumbs in separate bowls.
  • Coat the rice balls with egg whites first and then dredge it with bread crumbs.
  • Heat the oil in a deep frying-pan.
  • Fry rice balls for 1-2 minutes or until golden brown. (Turn it once)
  • Remove it from the oil and then place it on absorbent paper to absorb the excess oil.
  • Serve it hot with ketchup. 

INGREDIENTS

  • 150 grams rice (cooked)
  • 75 grams ground beef
  • 50 grams grated Parmesan cheese
  • 120 grams bread crumbs
  • 30 grams butter (melted butter for filling)
  • 60 ml Italian tomato sauce
  • 50 grams frozen peas (thawed)
  • 1 onion (chopped)
  • 1 egg white
  • 1 egg yolk
  • 1 table spoon of butter
  • Salt to taste
  • Pepper to taste
  • Cooking oil for frying
