WHITE BEAN AND SUN-DRIED TOMATO SALAD

Preparation Method :
- Heat the oil in a frying pan. Add the onion and garlic, and saute over a high heat, stirring, to gain a little color.
- When they are golden, remove from the pan.
- Put the beans into a mixing bowl and stir in the onion and garlic.
- Add the sun-dried tomatoes, olives, capers, thyme, extra virgin olive oil, lemon juice, and salt and pepper to taste, and mix well.
- Check the seasoning and serve.
INGREDIENTS
- 4 tablespoons Cooking oil
- 2 onion, sliced
- 2 garlic clove, crushed and chopped
- 700 grams can white beans, drained
- 250 grams sun-dried tomatoes in oil, drained and roughly chopped
- 2 tablespoon chopped black olives
- 4 teaspoons chopped capers
- 4 teaspoons chopped thyme
- 2 tablespoon olive oil
- Juice of 1 lemon
- Salt and pepper
