TOMATO AND MOZZARELLA SALAD

- Arrange the tomato slices in an overlapping circular pattern around a flat serving dish.
 - Sprinkle over the herbs and sugar and season with salt and pepper to taste.
 - Cover the dish loosely with foil and chill in the refrigerator for atleast 30 minutes.
 - Remove the foil and arrange the cheese slices in the centre of the tomatoes. Scatter the olives over.
 - Just before serving, pour over the olive oil and lemon juice. Use fork, gently to lift up the tomato slices so that the oil drains through to them.
 
INGREDIENTS
- 425 grams firm ripe tomatoes cut into ¼ in slices
 - 2 tablespoon chopped fresh parsley
 - 2 tablespoon chopped fresh basil
 - Pinch of sugar
 - Salt and freshly ground black pepper
 - 150 grams Mozzarella cheese cut into ¼ inch slices
 - 3 tablespoon black olives
 - 4 tablespoon Cooking oil
 - 1teaspoon lemon juice
