SALAMI AND PASTA SALAD

Serves :

Preparation Time :
20 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Bring a large pan of salted water to the boil, swirl in the oil and add the pasta.
  • Cook for at least 5-7 minutes or until tender yet firm.
  • Rinse under cold running water and drain.
  • Put the pasta wheels in a large bowl and mix in the salami, spring onions, artichoke halves, black olives and tomato wedges.
  • Pour the dressing over the pasta mixture and toss until coated.
  • Arrange lettuce leaves around the edge of a serving dish, then spoon the pasta mixture into the center.

INGREDIENTS

  • 250 grams pasta shells or wheels
  • 150 grams salami, cut into strips
  • 1 teaspoon Cooking oil 
  • 8 spring onions cut into lengths
  • 420 grams artichoke hearts, drained, rinsed and halved
  • 50 grams black olives
  • 2 tomatoes cut into 8 wedges
  • Lettuce leaves, to serve

For the dressing

  • 3 tablespoons Cooking oil 
  • 1 tablespoon white wine vinegar
  • ½ teaspoon sugar
  • ½ teaspoon mustard powder
  • Freshly ground black pepper
  • Salt , to taste
