SALAMI AND PASTA SALAD

Preparation Method :
- Bring a large pan of salted water to the boil, swirl in the oil and add the pasta.
- Cook for at least 5-7 minutes or until tender yet firm.
- Rinse under cold running water and drain.
- Put the pasta wheels in a large bowl and mix in the salami, spring onions, artichoke halves, black olives and tomato wedges.
- Pour the dressing over the pasta mixture and toss until coated.
- Arrange lettuce leaves around the edge of a serving dish, then spoon the pasta mixture into the center.
INGREDIENTS
- 250 grams pasta shells or wheels
- 150 grams salami, cut into strips
- 1 teaspoon Cooking oil
- 8 spring onions cut into lengths
- 420 grams artichoke hearts, drained, rinsed and halved
- 50 grams black olives
- 2 tomatoes cut into 8 wedges
- Lettuce leaves, to serve
For the dressing
- 3 tablespoons Cooking oil
- 1 tablespoon white wine vinegar
- ½ teaspoon sugar
- ½ teaspoon mustard powder
- Freshly ground black pepper
- Salt , to taste
