QUICK SPINACH

Serves :

Preparation Time :
20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in a large saucepan. Add the onion and garlic, and sauté for 5 minutes.
  • Put the pine nuts into a heavy-based frying pan and dry-fry until browned, stirring constantly as they turn very quickly.
  • Add the tomatoes, spinach, butter, and nutmeg to the onion and garlic Season with salt and pepper. Turn up the heat to high and mix well.
  • Cook for 3 minutes until the spinach has just started to wilt. Remove the pan from the heat, stir in the pine nuts.
  • Serve immediately.

INGREDIENTS

  • 2 tablespoon Cooking oil
  • 2 red onion, sliced
  • 2 garlic clove, crushed
  • 300 grams pine nuts
  • 6 tomatoes, peeled, cored and roughly chopped
  • 1 kg spinach, washed and trimmed
  • 100 grams butter
  • Pinch of nutmeg 
  • Salt and pepper
