QUICK SPINACH

Preparation Method :
- Heat the oil in a large saucepan. Add the onion and garlic, and sauté for 5 minutes.
- Put the pine nuts into a heavy-based frying pan and dry-fry until browned, stirring constantly as they turn very quickly.
- Add the tomatoes, spinach, butter, and nutmeg to the onion and garlic Season with salt and pepper. Turn up the heat to high and mix well.
- Cook for 3 minutes until the spinach has just started to wilt. Remove the pan from the heat, stir in the pine nuts.
- Serve immediately.

- 2 red onion, sliced
- 2 garlic clove, crushed
- 300 grams pine nuts
- 6 tomatoes, peeled, cored and roughly chopped
- 1 kg spinach, washed and trimmed
- 100 grams butter
- Pinch of nutmeg
- Salt and pepper
