PANZANELLA

Preparation Method :

  • Cut the bread into small pieces and place them in a large bowl.
  • Now remove the green cores from the Tomatoes. Cut the tomatoes and add them to the pieces of bread.
  • Now cut the Cucumber in quarters lengthwise and then into cubes, and add those to the salad.
  • Chop the Onions and add those to the bowl with the Parsley and the Olives.
  • Now for the dressing, mix together the Olive Oil, the Vinegar and the Lemon Juice, and season everything with Salt and Pepper.
  • Pour the dressing over the salad and mix everything well. Then cover and leave the salad to stand at room temperature for at least 1 hour before serving, so that the flavors mingle.

 

INGREDIENTS

  • 8 Slices of Ciabatta Bread
  • 8 Ripe Tomatoes
  • 1 Peeled Cucumber
  • 2 Red Onions
  • A Handful of chopped Italian Parsley
  • 2 Tablespoons of chopped Black Olives
  • 8 Tablespoons of Cooking oil
  • 6 Tablespoons of Wine Vinegar
  • 1 Lemon to turn into Juice
  • Salt and pepper as desired
