Preparation Method :
- Boil, steam or microwave potatoes until tender; cool.
- Blend or process avocado, mustard, garlic, egg and juice until just combined.
- Add oil gradually in a thin stream while motor is operating.
- Stir in water and chives. Combine potatoes, avocado mixture, mushrooms and tomatoes in large bowl, mix well.
INGREDIENTS
- 750 grams new baby potatoes, halved
- 250 grams avocado
- 1 tablespoon Dijon mustard
- 1 clove garlic, crushed
- 1 egg
- 2 tablespoons lemon juice
- 125 ml Peanut oil
- 100 ml water
- 50 grams chopped fresh chives
- 300 grams oyster mushrooms
- 250 grams cherry tomatoes
