ITALIAN HARICOT SALAD

Preparation Method :

  • Place beans, tomatoes, pickles, olives, anchovies, sun-dried tomatoes and capers in a bowl and toss to combine. Season with salt and black pepper and chill.
  • Mix mayonnaise through salad and top with tuna in olive oil, lightly flaked and parsley or herbs, Just before serving.

INGREDIENTS

  • 250 grams tuna in olive oil, chilled
  • 3 dill pickles sliced
  • 12 olives, black or green, halved
  • 4 anchovy fillets
  • 6 sun-dried tomatoes, halved, optional
  • 1 tablespoon capers
  • 750 grams beans selected from red kidney, borlotti, butter or cannellini, drained
  • 2 firm-ripe tomatoes, peeled and quartered
  • Freshly ground black pepper
  • 100 ml mayonnaise
  • Fresh parsley or mixed herbs
  • Salt to taste
