Preparation Method :
- Heat the oil in a saucepan. Add the Onion, garlic, and eggplants, and saute for 15 minutes.
- Meanwhile, make the salad dressing. Place all the ingredients in a jar with a lid, season with salt and pepper and shake well. Set aside.
- Add the tomatoes, anchovies, olives, pine nuts, capers, and parsley to the egg plant mixture and season with salt and Pepper.
- Pour in the salad dressing, mix well, then let the salad cool before serving.
