BROCCOLI WITH ANCHOVIES

20 minutes

Preparation Method :

  • Put the pine nuts in a heavy-based frying pan and dry-fry until lightly browned, stirring constantly as they burn very quickly. Set aside.
  • Steam the broccoli or plunge it into boiling water for 2 minutes, then drain well and transfer to a bowl.
  • Melt the butter in a small saucepan. Add the lemon juice and anchovies, and heat until the butter foams.
  • Pour the melted butter over the broccoli, sprinkle with salt and pepper, and toss.
  • To serve, top the broccoli with the Parmesan and pine nuts.
  • Serve hot or at room temperature.

INGREDIENTS

  • 500 grams pine nuts
  • 1 kg broccoli, cut into florets 
  • 100 grams butter
  • Juice of 2 lemons
  • 8 anchovy fillets, finely chopped
  • 400 grams freshly grated Parmesan cheese
  • Salt and pepper
