BRAISED FAVA BEANS AND LENTILS

Preparation Time :
10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in a heavy-based saucepan. Add the onion, garlic, and pancetta or bacon, and sauté for 5 minutes.
  • Add the lentils, beans, and marjoram. Season with salt and pepper and cover with hot water.
  • Mix well and simmer for 15 minutes. The water may need to be topped up during cooking if the mixture is getting too thick and sticking on the bottom of the pan.
  • Keep stirring, just to check that it does not stick.
  • Add the artichoke hearts and cook for 5 minutes. The mixture should be thick and rich.
  • Finally, stir in the butter and parsley, taste for seasoning.
  • Serve immediately.

INGREDIENTS

  • 4 tablespoons Cooking oil
  • 2 red onion, chopped
  • 4 garlic cloves, crushed
  • 300 grams diced pancetta or unsmoked bacon
  • 250 grams Puy lentils
  • 1 kg fresh shelled or frozen fava beans 
  • Marjoram, chopped
  • 10 fresh or canned artichoke hearts, prepared or drained 
  • 100 grams butter
  • Italian parsley, chopped 
  • Salt and pepper
