Preparation Method :
- Heat the oven to 180° C/350° F/ gas 4.
- Meanwhile, remove the stalks from the mushrooms and set it aside.
- Heat the oil and half the butter in a frying- pan, add the onion and garlic fry gently for 5 minutes until the onion is soft and lightly colored ( if used ).
- Put the cooked spinach in a bowl with the Ricotta cheese , breadcrumbs and parmesan cheese.
- Stir in the onion and garlic, together with the juice left in the pan and season to taste with salt and pepper.
- Place mushrooms, gills uppermost in an ovenproof dish and divide the stuffing equally .
- Dot with the remaining butter and bake in the oven for 12-15 minutes.
- Transfer the mushrooms to warmed individual serving plates, garnish it with sprigs of parsley and serve at once.

- 15 -16 large mushrooms
- 120 grams frozen chopped spinach, cooked and drained
- 1 tablespoon Cooking oil
- 50 grams butter or margarine
- 1 small onion, finely chopped
- 1 clove garlic, crushed (optional)
- 120 grams Ricotta cheese
- 75 grams grated Parmesan cheese
- 100 grams fresh white breadcrumbs
- Freshly ground black pepper and salt
- Parsley sprigs to garnish

I tried this at home with a little twist as I didnt found parmesan cheese here in my locality.This is really very innovative recipe and very quick to make. My family appreciated it. :) Thanks
